Apple Carrot Salad

A nice side salad served with the Pan-seared Salmon.

  1. 1 tablespoon reduced-sodium soy sauce
  2. 1 tablespoon fresh lime juice
  3. 1/2 teaspoon sugar
  4. 1 Granny Smith Apple, cored and julienned
  5. 1 large carrot, peeled, and julienned
  6. 3 stalks fresh cilantro, chopped

In a bowl mix the soy sauce, lime juice, and sugar until the sugar is dissolved. Gently toss the apple, carrot, and cilantro with the dressing.
