Apple Carrot Salad
A nice side salad served with the Pan-seared Salmon.
- 1 tablespoon reduced-sodium soy sauce
- 1 tablespoon fresh lime juice
- 1/2 teaspoon sugar
- 1 Granny Smith Apple, cored and julienned
- 1 large carrot, peeled, and julienned
- 3 stalks fresh cilantro, chopped
In a bowl mix the soy sauce, lime juice, and sugar until the sugar is dissolved. Gently toss the apple, carrot, and cilantro with the dressing.
