Chickpeas with Roasted Peppers and Orange Zest
A nice, warm side dish, flavored with the essence of orange and cumin.
- One 15-ounce can chickpeas
- Zest of 1 orange
- Juice of 1 orange
- 1/2 cup chopped roasted red pepper
- 1/4 cup chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/4 teaspoon kosher salt
Drain chickpeas reserving 1/4 cup liquid. Place chickpeas and orange zest in a serving bowl. In a small saucepan, over low heat, warm the 1/4 cup reserved chickpea liquid and orange juice until steaming. Turn off the heat and mix in the roasted red pepper, cilantro, cumin, and salt. Pour over the chickpeas. Serve warm.
