Curried Whole Wheat Couscous with Chickpeas

Mix all ingredients together and enjoy this healthy, tasty side dish.

  1. 1 1/2 cups water
  2. 1 cup whole-wheat couscous
  3. 2 tablespoons extra-virgin olive oil
  4. 1 tablespoon honey
  5. 1/2 teaspoon curry powder
  6. 1/4 teaspoon kosher salt
  7. Juice of 1/2 lemon
  8. 1/2 cup golden raisins
  9. 1/2 cup cooked garbanzo beans
  10. 2 tablespoons chopped green onion
  11. 2 tablespoons flat leaf parsley finely chopped

In a saucepan bring water to a boil. Stir in the couscous, cover, reduce heat to low and simmer for 5 minutes until all the water is absorbed. Turn off heat and let sit for 5 minutes. Meanwhile mix olive oil, honey, curry powder, salt, and lemon juice. After the couscous is cooked, remove the lid and gently stir with a fork to fluff and separate the couscous grains. Gently stir in the raisins, garbanzo beans, onion, parsley, and the curry/honey dressing. Serve warm or at room temperature.
