Kale with White Beans, Golden Raisins, and Orange Essence.
- 1 cup very finely chopped raw kale
- 1 cup canned white beans, drained
- 1/4 cup golden raisins
- 1/2 cup mandarin orange segments, drained
- 1 tablespoon white wine vinegar
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
In a bowl, combine all ingredients. Refrigerate and serve chilled.
