Kale with White Beans, Golden Raisins, and Orange Essence.

  1. 1 cup very finely chopped raw kale
  2. 1 cup canned white beans, drained
  3. 1/4 cup golden raisins
  4. 1/2 cup mandarin orange segments, drained
  5. 1 tablespoon white wine vinegar
  6. 1 tablespoon extra-virgin olive oil
  7. 1/2 teaspoon kosher salt
  8. 1/2 teaspoon freshly ground black pepper

In a bowl, combine all ingredients. Refrigerate and serve chilled.
