Mediterranean Salmon Packets

Salmon is such an easy fish to prepare, tastes great and is super nutritious. Salmon is low in mercury and packed with healthy omega-3 fat. Buy wild over farmed, if available!

  1. 4 6-oz skinless salmon filets
  2. 4 tablespoons extra virgin olive oil
  3. 1 14 oz. can chopped tomatoes, drained
  4. 2 shallots, chopped
  5. 1 fresh lemon
  6. 1 teaspoon dried thyme
  7. 1 teaspoon dried oregano
  8. Freshly ground black pepper
  9. Sea salt, optional

Preheat the oven to 400 degrees F. Place salmon on a plate and add olive oil, salt and pepper, set aside. In a mixing bowl add tomatoes, shallots, two tablespoons olive oil, juice from the lemon, oregano, thyme, salt and pepper and blend. Place each salmon filet, oiled side down, in a large piece of aluminum foil. Spoon ΒΌ of the mixture over the salmon. Fold the aluminum foil into a sealed packet. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large metal spatula, transfer the foil packets to plates and serve.
