Pea Pods with Almonds

Fresh pea pods only need to be washed and trimmed before cooking, and can be eaten pods and all. They are perfect for stir-fry dishes as their tender sweet crispiness needs little cooking. For this dish, have all ingredients ready prior to cooking as it cooks very fast.

  1. 1 tablespoon extra-virgin olive oil
  2. 2 garlic cloves, sliced
  3. 2 cups sugar-snap pea pods, trimmed
  4. 1 teaspoon dry white wine, such as Chardonnay
  5. 1/4 teaspoon kosher salt
  6. 1/4 teaspoon sugar
  7. 1/4 cup sliced almonds, toasted

Heat a large skillet over medium-high heat. Add the oil and when it is very hot add the garlic. Cook stirring constantly for 4 to 5 seconds. Add the pea pods and cook stirring for another 15 to 20 seconds. Add the white wine, salt, and sugar and continue to cook while stirring constantly for another 20 seconds. Sprinkle with the almonds, mix well, and serve immediately.
