Spinach with Pine Nuts and Raisins

A quick, easy, and most delicious way to serve fresh spinach.

  1. 2 tablespoons pine nuts
  2. 1 tablespoon extra-virgin olive oil
  3. 2 garlic cloves, peeled and sliced
  4. 2 tablespoons raisins
  5. One 5-ounces box baby spinach
  6. 1/4 teaspoon kosher salt
  7. 1/2 teaspoon freshly ground black pepper

In a large skillet carefully toast pine nuts over medium heat until lightly browned. Remove pine nuts to a dish. In the same skillet heat the olive oil over medium heat. Add garlic and raisins and stir while cooking to soften about 1 minute. Stir in the spinach. Using a pair of tongs, or two wooden spoons, toss the spinach with the oil to wilt the spinach. Turn off the heat and season with salt and pepper. Sprinkle with pine nuts and serve immediately.
